It consists of steel with 18% chromium, which makes the metal hard and shiny and 10% nickel which keeps it from tarnishing. (Over 50 years ago it was discovered that a minimum of 12% chromium would impart corrosion and oxidation resistance to steel. And nickel increases the corrosion resistance.) 18/10 stainless, because it has 10% nickel is more rust resistant than 18/8 stainless which contains only 8% nickel.
